Yum, Good.

When the snow melts the rhubarb springs forth and nothing grows as fast as rhubarb although the weeds seem to compete pretty well. This is the first of what I hope is many rhubarb pies this year. Four stalks made the required number of cups for the pie. Barring disaster we still have many pies in the three plants growing. It also freezes well but in the freezing process it shrinks in volume. The photo shows the pie just as it came from the oven and now our self discipline must kick in while we wait for it to cool off.
